- Medium Beef – Veal – Lamb : 71C or 160F
- Well Done Beef – Veal – Lamb : 77C or 170F
- Poultry Pieces: 74C or 165F
- Poultry Whole: 85C or 185F
- Cooking Time
- Medium Rare Beef : 20 min/lb
- Medium Beef : 25 min/lb
- Well-Done Beef: 30 min/lb
- Medium Lamb: 25 min/lb
- Well-Done Lamb: 30 min/lb
- Poultry: 30 min/lb
Cooking Steak in the Oven
Who says winter has to put a damper on a good steak? Here’s a quick way to improve your indoor-cooked steak.
- Turn oven on broil and put pan or sheet which you will be cooking the steak on in the oven
- Leave the pan in the oven until a flick of water sizzles on it
- Remove pan and turn oven onto bake (325-350F)
- Sear steak on both sides on hot pan
- Put steak & pan into the oven and cook.
